Jealousy...
What does it look like in your heart or life?

Or maybe you never get jealous!

If you have ever had the awful experience of being jealous,
Or being the object of another's jealousy it hurts.
It truly is an empty feeling or emotion with rotten fruit.

I have been on a learning curve to be truly happy for others success in life.
Giving God praise for His promotion in another's life.

Really, every other person out there has something you don't have.
Happy marriage
Perfect body
Money
Friends
Popularity
Children
Good health
Great skills
Good cook
Artistic
Funny

But, I will say this; We are not missing anything!
Our lives are moving in the timing and direction the Lord has for us!

Jealousy is a monster that may just hide under the bed;
It comes out when it thinks it won't be detected.

Look, if someone else has it, we want it...
MINE

You are given your portion and it is up to you to use what you have!

You can always improve on something in your life!

Jealousy is where you want what another has!
(In a way it is a bit like wanting to steal)
It is a bit like being greedy because after all you have your portion!

But I want what they have...

I have come to realize that my portion was fitted just for me...
Once again, it's a bit like the glass slipper;
No matter the size of the lady's foot, she wants to try;
And try they did, big foot, skinny foot and the larger foot!

But one size in this world does not fit most of us!

We all need to learn to be happy for those around us that just seem to have it all!

The Perfect Life


Well lets not allow the green eyed monster to live under our bed!!

Turn on the lights, sweep out from under that bed;
(Get your heart in the place of being happy for who and what you have)

Do not feed that monster!!
It will never go away if you do that...

Be Happy and content with what you have;
Your Husband
Your Children
Your Home

Work on what can be shored up!
We all need a little bit of paint and sweeping up!
Put on your smile and quit grumbling!

Truly, most people can just look at us and know if we're for real,
Or putting on our make believe I am happy for you face!

Be real and stop allowing jealousy to have a place in your life today!

Moist and Easy Corn Bread...

Corn Bread

2 Boxes of Jiffy Corn Muffin Mix
4 Eggs
16 oz. Sour Cream
2 Sticks Butter, Melted
1 can Cream Style Corn

Preheat oven to 350 or 400
Spray a 9 x 13 pan
Bake for 55 min
 Or until golden brown

This is really really really good!
Your family and friends will love this!
The ultimate comfort food!

Yes, you read it right, you start with 2 box's of Jiffy corn muffin mix
Enough butter to clog your arteries.

Garlic Wonders And Ways To Use It...

Garlic Wonders...

Garlic is a very interesting food wonder and also a medicinal treasure.

After many years of enjoying garlic and preparing it by crushing or slicing it up,
I have found a way to enjoy it in so many different ways.
Simply by cooking it slightly;

So once again, I  have been newly reminded of its value.

Of course we all have added fresh garlic to a spaghetti sauce,
But now I can use it in so many more things.
But to eat it with other dishes as a health benefit is what I am talking about.

I have been taking a few whole bulbs of garlic and I cut off the end of the root,
 And then I place them in aluminum foil, then I drizzle them with olive oil,
Wrap it up and bake them in the oven or;
You can even use your toaster oven on the toast setting and they cook up great!
But it is best to only cook it for a short amount of time or until just tender.

Garlic Benefits
Garlic has so many benefits;
Garlic contains a compound called Allicin

Garlic has an anti-inflammatory properties in it.
Also, it has an antiviral action that helps fight infection and fungus.
Garlic may also improve our metabolism of iron.

I like to make a bunch of it up at a time and then I can use a cooked clove in many things.
Scrambled eggs or an omelet. Add it to soups and sauces!

If you ever make up your own hummus spread it taste so much better 
if you use the lightly cooked cloves instead of it being raw.
We have been eating hummus for a great healthy snack
So Add some cooked garlic cloves to it, and spread it on some crackers!
Also try adding it to egg salad it just makes it delicious!
You can use it in so many different foods when it is lightly cooked!
So Yummy!

I guess the key is to incorporate it into your daily meals, just not spaghetti sauce.
Be adventurous...

                                      The garlic has been referred to as the stinking rose!
I think our bodies adapt to the strong smell of garlic;
And we will not be so sensitive to the fragrance of it if we all eat it!

How To Make A Delicious Dumpling...

~Dumplings~

Ingredients Needed:
2 cups flour
1-1/2 tsp salt
1 TBL. Baking Powder
2 TBL. Vegetable oil
1 egg, beaten
1 cup warm milk
Salt and pepper the tops of them after you drop them in the broth...

Add dry ingredients, mix well in a bowl
In a measuring glass warm your milk, then add your oil and the beaten egg!

Pour this into the dry ingredients, the dough will be a bit sticky.


Now, Drop a spoonful of the dumpling mixture into hot chicken broth;
Cover and steam for about 4 to 5 minutes. Do not allow it to be a roiling boil
 The tops will look cooked and a bit firm after cooking time.

Carefully remove dumplings with a slotted spoon onto a plate with paper towel, to drain extra liquid
Cover in a separate container from the soup or broth, as this allows you to keep them from getting soggy.  These taste yummy warmed up and topped with a bit of butter. Or place in a bowl and add your chicken soup stock with veggies!

 I like to eat them just by themselves!

These are very simple to make and require only a few ingredients!




This was my own version for making dumplings!


I have very fond memories of eating dumplings as a child,
Our Mother made them often for dinner.
It is a nice change from having potatoes or rice all the time!

But I finally came to the conclusion something was just missing from the
Flavor and texture of my Mothers dumplings;
So I did a bit of testing and found it needed more salt and an egg for richness!
The liquid needed to be thicker than broth or water, so I tried warm milk.
Warming the milk really did make a difference in the batter.

These dumplings only take about 5 minutes to cook;
Just have them at a light boil and cook with the lid on the pan!





So if anyone ever calls you Dumplen,

How to Jazz Up A Plain Message Cork Board, And A Simple Dinner Idea...



Well, I finally bought myself a pre-made cork board,
I brought it home painted the sides a dark bronze color with a bit of metallic!
Then I bought a pretty metal flower for the top center to add a bit of color!
The color of the flower went well with my yellow, wild Mediterranean colors!


I placed this just under my calendar and I now have a little message area!

I was going to make up my own board, but after finding this one,
Already with the cork and a chalkboard!
Less work and all I needed was a small bottle of craft paint and a metal flower...
Ta- Daaa!

Okay, this is what I have been thinking about!
This is about the time of year when you get a bit weary with what to 
Prepare for dinner...

So if you want Chic and Easy for a Dinner idea;
It is so tasty and very satisfying!

Try Roasted vegetables in the oven;
Wash your choice of vegetables, then just slice them in the same size
Try using some
   Potatoes, regular and a sweet and some cauliflower,
Add those root veggies you like
Some squash like butternut, Brussel sprouts.
Eggplant...
Check below for your suggestions to roast!


Drizzle with olive oil, add whole sprigs of rosemary herb,
Cover with some foil for a little while, 20 minutes or so,
Bake in a 350 degree oven till a fork goes into them and they are tender!

You can sprinkle some grated Parmesan cheese on them
 After they cook through completely and you are ready to serve them!



Sometimes we just need a small project that is affordable and yet is very useful!

Being able to jazz up something plain-jane can be fun!

May we all see our kitchens as a place to be a blessing and nutritious too!

I must confess that I have had to make a look alike in my own way and ability!
This lady is an artist an a baker to boot...

Okay, here is my version;
A white cake mix
Whipped cream frosting, or cream cheese frosting
You need some Rose petals
A cake stand or glass plate
Once again, it is all about presentation!
If you like coconut you can garnish it on top of the cake!
Use your imagination!

Or you could make a smaller version as cupcakes!

Relax and reach for a lovely cake a bit above the normal...

How To Serve Meals That Are Lovely, Yet Frugal...

A Frugal Idea!

I must admit, one of my most favorite easy peasy meal is this--
A warm bowl of tomato soup with a grilled cheese sandwich,
Made either on sliced bread or a flour tortilla.

I think sometimes we just need something easy to prepare and to enjoy!
Even if it is just an easy frugal meal does not mean it can't
Be served in something pretty!

Being visual in serving a meal goes a very long way.
Sometimes just serving something light on a pretty platter or plate,
Is a secret key to not feeling cheated in what might be considered a frugal meal!

We all know how often we come across a pretty plate or bowl,
While on our treasure hunts, keep this in mind to find a few items,
To use for appeal and presentation of our frugal meal ideas.

If you could plan at least a few meals a week that were considered
(Very inexpensive to make) and then were able to save a bit of money.
You would learn to be very creative to keep the cost down, 
But the appeal and the presentation of it is desired!

A quiche made of eggs and a bit of veggies can be very satisfying
When served with a bit of bread!

A hearty bowl of soup made from things that were just a bit of this and that.
Served in a pretty mug can fill an empty tummy!

Can you buy a whole chicken and make three meals or more from it?
Well, If not you should learn quickly!

Can you take a few items and make a meal?
You could and should!

Do you eat out often?
May I remind you of the expense of this little convenience;
"Do not even mention the sodium and fat.

Think simple and real food items!
Serve with love and on some pretty dishes,
Say grace and enjoy...

Then serve a little bit of something sweet;
Maybe a small cookie,
 Or a little glass custard bowl filled with some pudding.
Try a  little square of some dark chocolate.

Being frugal is down right fashionable dear ladies;
It shows a great creativity on your part!
And speaks volumes to out Hubbies that we honor them
And their Hard work and the income they bring in!

We really need to ask ourselves a bit more often before a purchase,
Is this;" Is this a need or a want??"

Ask Yourself this question;
How many hours has my Husband had to work for me to purchase this item?

Million Dollar Fudge...



Million Dollar Fudge Recipe

My Dear Mother use to make this Fudge Recipe every Christmas!
This recipe has been around for years and so it is tried and true;
Sweet and smooth
 Creamy and tasty

I feel that if you mix the first 4 ingredients in the saucepan and warm it slightly
 Till butter melts, shut off the stove and let it sit for a little while,
Stirring it often it allows the sugar to dissolve a little.
(My little secret so the fudge is creamy and not grainy)!!



 Million Dollar Fudge

Put In Saucepan;

4 1/2 cups sugar

1/4 tsp. of salt

2 tablespoons butter

1- 12 ounce can evaporated milk

Put in a bowl;

1 bag- 12 ounces semi-sweet chocolate chip morsels

2- 7ounce size Hershey Chocolate Bars (Giant Bar)

1 pint marshmallow cream (7oz size)

Add a few Walnuts if you like nuts or any kind is good. 1/2 cup or so..


In the large bowl Put chocolate chips and both chocolate bars broken into chunks
 Add the marshmallow cream and walnuts in a big bowl. (Set Aside)


Boil the sugar, salt, butter, evaporated milk together for six minutes.
Use your timer!

Pour the boiling syrup over the ingredients. Beat until chocolate is all melted, then pour
Into a lightly greased 9x13 pan. Let stand a few hours before cutting.

Remember, it is better the second day. Store in tin box. And use wax paper on top and pop 
into your freezer.
 I leave a small tin in the refrigerator and the other one I freeze for New Years!

So far I have made two Pumpkins pies and one apple pie this morning!
The Pumpkin pies are for my Hubby, the apple is for me ;o)
I Have all the ingredients for my Fudge,
I enjoy making this because of all the sweet memories as a child!

How Making Breakfast Keeps Your Man Happy (Green Chili Omelette)...

A good breakfast is a perfect way to start your day!
Having chickens for many years has offered a very
Fresh and nutritious form of protein.

And we are known in these parts for our Chilis;
Hot, mild and just flavorful!
I will eat a hot one once in a while, but the mild is for me.

We are way past the egg not being a healthy form of protein!
Or at least I hope you are!
I have never seen so many troubles with diets in our world.
Between no gluten and lactose intolerance for so many people.

I have my own idea what has caused this to be so prominent.



How to make a Green Chili omelette;

I like to get my chilies cooking first in the pan.
Then I sprinkle on the chesses, cheddar is best I think.
Then I pour in the eggs I whipped up!
You can flip it once to cook the bottom.

Serve with a side of meat like ham or bacon.
 A cinnamon roll is always a nice addition.
But we mostly use a whole grain bread!

I enjoy serving my Hubby a very filling breakfast;
made with love!
As this keeps him Happy and well cared for!

It will be a rustic sort of bread, but very low in glycemic index.

How To Make Homemade Granola With Walnuts And Coconut...

Making your own Granola is a very practical and cost effective.
This is a staple food item for eating as a cereal or using it on top of your yogurt.

You can improvise with many different choices of nuts or fruit.
I think what makes this granola work for me, is the coconut oil I use in it!
Also the coconut sugar, but you could use brown sugar if you like.
With so many recipes I have tried, they call for too much honey.
 and that makes it so wet and harder to dry.

The flax meal and wheat germ are added for extra nutrition.
But you can also eliminate them.
Also, you can also leave out the flour.

But it is the coconut and chopped walnuts that make it so yummy.

After it has completely dried out in the oven, I then let it cool
 And store it in an airtight container or a glass jar!

You can really taste the difference between fresh granola
and store bought brands. And the cost of the store brands has
doubled in cost. And the packages are smaller too.



Homemade Coconut and Walnut Granola

I wanted to share this my fewest closest 100 friends!
Every Granola I have made in the past has been lacking in either texture or taste;
So here is my creation of a Granola I would be willing to share…

Heat your oven to 250 degrees;
 (But you will turn it off to the lowest setting or the Warmer setting to bake it.
In a 9x13 pan
Place 3 TBL. Of organic coconut oil
1/3 cup of organic coconut sugar in the pan, place in oven to melt, only a few short minutes.
Pull it out of the oven and now add this mixture.
¼ cup mixture total of,
 2TBL. Coconut flour, and wheat germ, and ground flax seed (1/4 total)
 Now stir this into the melted coconut oil and sugar in the 9x13 pan.
Mix it up a bit; Now
Add 2 cups of organic rolled oats to the pan
1/3 cup flaked coconut
1/3 cup chopped walnuts
Mix this up and place it in a turned down oven to the lowest setting!
Stir often and watch carefully so it will not burn!
This needs to be only a warm oven; turn it off if it gets too hot;
You are only trying to DRY this mixture NOT cook it!!
Allow to cool well and store in a Glass jar.

A Man Needs A Good Meal

So many men are just plain hungry...

If you want your Hubby to want to come home quickly,
Then you have the very thing to use daily to ensure that they
Do come HOME soon after work or running errands.

I love having my hubby home,
 I love the fact He wants to come HOME

I think one thing I have done very early on in my marriage was this;
FEED MY HUSBAND
Everyday...
He does not have to run out and get a sandwich or a burger
With friends or with the guys he works with.

I have seen way too many men, just plain hungry!

Now, I know many Men like to cook!
I think that is wonderful!

But I am also glad that my Husband wants and loves my cooking!
He prefers my breakfast specials,
He loves my hamburgers with green chilies on them.
He loves anything that is made from our kitchen.
This is called HOME COOKING...

I am not a gourmet cook, I cook and serve Home style meals.
Call me old fashion;

A man needs to know and can count on an evening meal for sure.
Some men need a big breakfast!
Some need a hearty lunch!

If you want to keep a Hubby happy feed him ladies!
I would hope that making a satisfying meal for him
 would also give you pleasure.

This is a test;
Cook some potatoes,
Now this week I want you to make at least one of these up!
Fried potatoes
Boiled potatoes 
Mashed potatoes
Baked potatoes

Serve with another meat or salad!
And a side dish of  veggies, applesauce or biscuits.

You will have a very Happy Hubby!

I think the potato is a homemakers best friend
Besides the crock-pot.

You can buy potatoes so cheap, and they can be very nutritious!

How Using Your Provisions Wisely Saves You Money...

If I had to live off the land I would learn very quickly to appreciate the harvest!
We tend to forget all the hard work that
Goes into putting food on our tables.


We live in a country where we take so much for granted!
Very few people truly really go hungry, 
Because of State provisions,
Food Stamps and such!
Soup kitchens can be found and utilized in most cities.
Even in the Public Schools they provide breakfast programs.

We have all seen the dramatic rise in food cost in the last few years!

So my thoughts have been leaning toward, how well are we using
Our food resources?
How many morsels of food are being wasted at every meal?

Our we cooking the right portion size,
 so we do not have so much wasted food.
Are we freezing the portions we can use for a later time?

My daughter once told me that she uses this thought when
purchasing her food or household items.
"She asks herself how many hours did my Husband have
to work to pay for these things?"

This may help us put it into a real perspective of the actual cost!

If I were to have to rely solely on my own food production,
We would be very shocked by our lack of choices!
We know longer are very well equipped to even do this!

I have always enjoyed the magazines that teach the
 How Too of living off the land.
I think God has given us a deep desire to work and provide food,
For ourselves and those we love!

So I think it is time to ask ourselves these questions;
Have you learned the art of canning?
Can you make jelly?
Can you make bread from scratch?
Do you have a resource of books put away for knowledge
that might be needed on How to...

We are to be wise stewards of our time, talent and resources...

He alone is the Lord of the Harvest!

I believe we will be a wise woman if we learn to be proficient
in keeping our shelves stocked and knowing how to cook!

We can learn to cut our food cost by learning to plan meals.

Watch for sales on food items in your grocery stores!

Learn to freeze some of these foods that you buy on sale!

Ask another woman who knows how to can, to teach you!

Take a class from your county extension office
 For how to preserve your foods.

(I just learned last year you can make a large batch of rice and freeze it!
You just make a double batch,
Then allow it to cool only slightly; then put the amount
You will need for a dinner serving and freeze in a plastic bag.)
This works great for a quick side dish;
Or just open up some beans and you have a perfect protein.

I also always cook a large amount of dried beans and freeze them!

How To Make Mississippi Mud Cake...

Mississippi Mud Cake

Preheat oven to 350 degrees, Also Grease a cookie sheet pan

In a saucepan, add these ingredients;

2 sticks butter

1 cup water

4 tablespoons baking cocoa powder

Whisk together and bring to a quick boil

Remove from heat;

Add;

Add 2 cups sugar

½ tsp. Salt

2 eggs

½ tsp. Soda

2 cups flour

Mix well and then pour into a greased cookie sheet

Bake 15 minutes at 350 degrees

Take out the cake and wait for 1 minute to frost it!



Frosting; Place these ingredients listed below in another saucepan and bring them to a quick boil

1 stick butter

4 tablespoons of baking cocoa powder

4 tablespoons of milk

Remove from heat and now add;

2 cups powder sugar

2tsp. Vanilla

Stir well and frost your cake quickly


Now who here has not ever tasted the classic Mississippi Mud Cake?
This cake has many alias names;
Texas sheet cake ...
Call it what you want, but please lets just
Eat Cake...

This sheet cake is the best company cake you can make,
 as it feeds a large crowd!
 It is moist yet not too sweet. It always looks very elegant and decadent.
It tastes very buttery and so chocolaty rich.
You can hardly eat just one piece of it.

This cake always brings me very sweet memories;
As my Mother-in-law made this often!
And I made this so many times when the children were younger!

How To Make Easy Lemonade...

Lemons and Limes
These always make me feel refreshed...




 How I make my refreshing lemonade.

My lemonade recipe is very easy and it is tasty!
Also This Is a Very Frugal way to prepare a refreshing beverage!

I use my 1/2 gallon pitcher
3/4 cup sugar
1/2 cup Real Lemon juice
Add water
Stir well
Chill it well then serve it over ice!
You can always add a slice of fresh lemon in the glass!
I have been making this lemonade this way for almost 30 years.
It is quite cheap and it tastes very fresh.
I only use the Real Lemon juice brand as it is stronger in flavor.
I buy it in the large 2 packs from Sam's club.

My kids are grown and now my grandchildren drink this lemonade.
I know people may squeal over the sugar in it, but it
is more of a real and natural alternative to pop and sweet drinks.
No dyes and no preservatives.
We drink this all year round not just in the summertime.
I also make up two 1/2 gallon pitchers at a time.
 And put one in the back fridge.

Lemon Lemonade is a sweet memory that we all enjoy!
Try it, I think you will find it very delicious.

Start with your graham cracker crust;
And once you learn to make your own you will not want
 Those store bought ones again!
 Graham Cracker Crust
1 package graham crackers
(You can use a food processor or
 Place them in a bag and crush them with your rolling pin)
In a bowl, add these items;
Graham crackers
1/4 cup Sugar, or less (I do not like mine too sweet)
6TBL. Melted Butter
Mix together and press into a 9-inch pie pan
Bake at 350 degrees for 4 minutes
Until just lightly browned
(Do Not Overcook)

I love the smell of this crust!
Once it is baked, let it cool!



Now, for the Key Lime Pie Filling;

In a bowl now add these three ingredients;
1 can (14oz.) Sweetened Condensed Milk
1/3 cup lime juice (fresh or bottled)
1tsp. Grated lime peel (You will need a zester tool for this)
Beat sweetened condensed milk and lime juice until combined;
Stir in your lime zest.

Pour into the cooled pie crust;
Spread with whipped Cream,
Refrigerate for 2 hours or until set.

Making Fresh Whipped Cream
1 pint size of whipped cream
1/4 cup powder sugar
2tsp. Of vanilla

~I make my own vanilla~


Beat with your electric mixer till slightly stiff!
Place on top of the pie and refrigerate till well chilled!

This would be a very nice and easy pie to make for
 Mother's Day!
Father's Day!
Easter!
Picnics!
Any day!
Or for a cool, quick refreshing spring or summer dessert!
